Pickling Spices is a traditional British recipe for a classic spice blend used for flavouring pickling vinegar before pouring over vegetables to preserve them. The full recipe is presented here and I hope you enjoy this classic British version of: Pickling Spices.
Simply mix all the ingredients together and store in an air-tight jar. If you want to give your vinegar a red colour (as when pickling red cabbage) add 1 tbsp paprika.
To use this blend to spice vinegar the easiest way is ti add 2 tbsp of the mix per 1l of vinegar. Allow to infuse for 6 weeks, shaking the jar every week, before using.
