Ingredients:

1.5kg red cabbage, quartered, cored and finely shredded (a chiffonade)
75g onions, coarsely chopped
1 tsp garlic, finely chopped
2 tbsp tomato purée
700ml water
2 tsp salt
6 tbsp butter, diced
3 tbsp fresh lemon juice
1 tbsp sour cream

Method:

Combine the shredded red cabbage, onions and garlic in a large (at least 4l) stainless steel pan. Whisk the tomato purée into the water and pour over the cabbage. Add the butter and 1 tsp of salt. Stir to combine then bring to a boil. Reduce to a low simmer, cover tightly, then cook for 45 minutes, or until the cabbage is completely tender.

Now add the lemon juice and the remaining salt. Stir well to combine and take off the heat. Finally, stir in the sour cream and adjust the seasonings to taste. Turn into a warmed serving bowl and bring to the table.
