Pollo de Chocolate (Chocolate Chicken) a Classic Mexican recipe for a dish of chicken breasts cooked in a chicken broth base flavoured with cocoa powder, brown sugar and tomato purée.
Heat the oil in a large frying pan. Lightly flour the chicken breasts, add to the pan and fry until nicely browned all over. Remove with tongs and set aside.
Heat the chicken broth in a saucepan. When it begins to boil add the tomato purée and stir to combine. Add the onion to the oil remaining in the frying pan and cook, stirring frequently, until browned (about 5 minutes). Scatter over the cocoa powder, cinnamon and sugar then stir to combine.
Return the chicken breasts to the pan then pour over the chicken broth and tomato mix. Bring to a simmer and cook for 20 minutes. Finally add the cream and cook for 2 minutes, or until the sauce thickens.
