Ingredients:
500g tomatoes (after blanching, peeling and de-seeding)
50g fat or dripping
40g potato flour (or use ordinary flour)
1.5l stock
3 tsp sugar
salt and black pepper, to taste
Method:
Melt the fat in a pan then add the tomatoes and fry until soft. Blend-in the flour and then the sugar and add the stock. Season well, bring to a boil then reduce to a brisk simmer and cook for 30 minutes.
