Ingredients:

1l stock or broth
150g young stinging nettle tops
1 large onion, finely diced
1 hard-boiled egg, chopped
120ml cream (optional)
oil for frying

Method:

Bring 250ml water to a boil, add he nettle leaves and blanch for 1 minute. Drain in a colander then combine the nettle leaves and the stock in a pan. Bring to a simmer and cook over low heat for 15 minutes.

Add a little oil to a pan and use to fry the onion for about 8 minutes, or until soft and golden. Blend into the nettle mixture then take off the heat. Allow to cool slightly then process in a liquidizer until smooth. Return to the pan and allow to heat through (for a richer flavour add the cream before heating through).

Serve ladled into warmed soup bowls and garnished with chopped egg.
