This is the traditional pizza, divided into four quarters where each quarter is intended to represent one of the four seasons of the year.

Ingredients:

1 bread dough pizza base
1 batch special pizza tomato sauce
30g Chorizo sausage, thinly sliced
30g button mushrooms, thinly sliced
45g artichoke hearts, thinly sliced
30g Mozzarella cheese, thinly sliced
3 anchovies, halved lengthways
2 tsp capers
4 pitted black olives, sliced
4 fresh basil leaves, shredded
olive oil for drizzling
salt and black pepper, to taste

Method:

Roll or knead the pizza dough into a 25cm circle on a floured surface then transfer to a lightly-greased baking tray. Use your fingers to roll the edges slightly so they're higher than the base. Cover and set aside in a warm spot to rise for about 10 minutes. After this time spread the tomato sauce over the pizza base, covering it almost to the edge.

Place the sliced chorizo on one quarter of the pizza, the sliced mushrooms on another, the artichoke hearts on a third and the Mozzarella cheese and anchovies on the final quarter.

Dot the entire surface with the capers, olives and basil leaves then drizzle with a little olive oil and season liberally (but don't put any salt on the anchovy section as the fish are already very salty!).

Place in an oven pre-heated to 200°C and bake for about 20 minutes, or until the crust is golden and crispy. Serve hot.
