This is the Rolls-Royce of tomato sauces for your pizza, made with real, fresh, plum tomatoes.

Ingredients:

1 small onion, chopped
1 small red bell pepper, chopped
1 garlic clove, crushed
2 tbsp olive oil
250g ripe plum tomatoes
1 tbsp tomato purée
1 tsp soft brown sugar
2 tsp fresh basil, chopped
1/2 tsp dried oregano, crumbled
1 bay leaf
salt and black pepper, to taste

Method:

Heat the oil in a pan and use to fry the onion, bell pepper and garlic until softened but not browned (about 5 minutes). Blanch the tomatoes (this is best done by cutting a cross in the bottom of each. Place in a bowl and pour boiling water over the top. Leave for 45 seconds then drain and immediately plunge in cold water) the skins will then slide off easily.

Chop the peeled tomatoes (discard any hard cores) then add them to the onion mix and stir-in the tomato purée, sugar and herbs. Season well then bring to a boil. Reduce to a simmer, cover and allow to cook for 30 minutes, stirring occasionally, until you have a thick sauce.

Remove the bay leaf and adjust the seasonings. Set the pan aside to cool completely before using. The sauce can be kept in a screw-top jar in the refrigerator for up to a week. It also freezes well for later use. Though intended as a pizza topping it also makes a great base for a pasta sauce.
