Zesty and vibrant, Pisupo is a dish that brings the flavours of the Pacific right to your kitchen. This is the national dish of Samoa.
Ingredients:
350g (1 tin) corned beef
500ml water
1 tbsp vegetable oil
1 medium onion, diced
2 garlic cloves, minced
Method:
Heat the vegetable oil in a large, heavy-based, frying pan or skillet over medium heat until the oil is shimmering.
Add the diced onion, frying for about 3 minutes until translucent. Stir occasionally during this time to prevent burning.
Mix in the minced garlic, cooking over medium heat for another minute until fragrant.
Open the tin of corned beef and add it to the pan, breaking it apart with a spoon or wooden spatula. For a smoother texture, you can use a potato masher as it cooks.
Pour in the water, stirring to combine all ingredients, and bring the mixture to a simmer.
Reduce the heat to low and let it cook gently, uncovered, for 20 minutes, stirring occasionally, until the mixture thickens.
Pisupo is perfect served over steamed rice or with a side of fresh vegetables for a balanced meal. The flavours deepen if left to sit, making it taste even better the next day.
