Pilav Limon (Lemon Pasta Pilaf) is a traditional Georgian recipe for a classic accompaniment orzo pasta cooked in chicken stock flavoured with basil and lemon zest that's served like pilaf rice. Ingredients:
440ml chicken stock
240ml water
150g orzo pasta
1 tsp dried basil, crumbled
1 tsp freshly-grated lemon zest
4 tbsp fresh lemon juice
chopped flat-leaf parsley, to garnish
Method:
Combine the chicken stock and water in a pan and bring to a boil (use a medium saucepan). Stir in the orzo pasta, basil, lemon juice and lemon zest. Return the mixture to a boil then reduce the heat to a simmer.
Continue cooking, uncovered, for 10 minutes, or until the pasta is tender and almost all the liquid has been absorbed.
Take off the heat, garnish with a little flat-leaf parsley and serve.
