This is a recipe for the pilau masala powder that's used almost ubiquitously as a flavouring in Tanzania and Kenya to flavour curries and rice.
Heat a dry frying pan over moderate heat and add the cumin seeds. Dry fry for a minute then add the cardamom seeds and cloves.
Continue dry frying until the spices become aromatic then tip the spices into a spice or coffee grinder (along with the remaining ingredients). Grind to a fine powder and store in an air-tight jar.
