Parmentier Potatoes

It was only in the middle of the 18th century, that a French royal agriculturalist, Antoine A. Parmentier popularised the potato in France. As a result, a number of French dishes that employ potatoes as a garnish or main ingredient have the descriptive term 'Parmentier'. The name also lends itself to a type of medium dice that is used to chop potatoes.

Ingredients:

4 large Potatoes, washed and peeled
Salt
Rosemary
Vegetable Oil

Method:

Cut your potatoes into small cubes about 12mm to the side.

Bring a pan of lightly-salted water to a boil. Add the potatoes and cook for 5 minutes over low heat. Turn into a colander then tip into a bowl and season with fresh rosemary, salt and a little olive oil. At this point pre-heat your oven to 200°C.

Turn the seasoned potatoes into a roasting tin and spread out in a single layer.

Transfer to the centre of your pre-heated oven and roast for 35 minutes, until golden and crispy around the edges.

Serve hot.
