Pão de Ervas (Herbed Sourdough Bread) a Classic Brazilian recipe for a sourdough bread flavoured with mixed herbs and sweet paprika".
Ingredients:
1kg strong white bread flour
200g sourdough bread dough prepared 1 hour before you need to use it
200g margarine
20g live yeast
warm water, to bind (about 700ml)
2 tbsp parsley, chopped
2 tbsp chives, chopped
2 tbsp fresh oregano, chopped
1 tsp sweet paprika
Method:
In a bowl, combine the flour, sourdough starter, margarine, yeast, herbs and paprika.
Mix all the ingredients well, then work in just enough of the water to bring the ingredients together as a dough.
Turn the dough out onto a floured work surface and knead thoroughly for 20 minutes, until the dough is smooth and elastic.
Form the dough into a ball, place in a bowl, cover with clingfilm (plastic wrap) and set aside to rise in a warm place for 60 minutes.
After this time, knock the dough back, cut into 6 equal-sized pieces, shape into rounds and place on a lightly-greased baking tray. Cut a cross in the top of each bun then cover loosely and set aside to rise for 60 minutes.
Transfer to an oven pre-heated to 200°C and bake for about 15 to 20 minutes, or until cooked through and lightly browned on top. Like all breads, these buns should sound hollow when tapped on the base.
