Pão de Aveia (Oat Bread) a Classic Brazilian recipe for a loaf of bread made from a bread flour base, but incorporating rolled oats and oatmeal into the dough.

Ingredients:

500g strong, white, bread flour
2 tsp salt
3 tbsp sugar
50g margarine
1 1/2 tsp brown sugar
125g rolled oats
35g fine oatmeal
1 tbsp active, dried, yeast
300ml lukewarm water (about)

Method:

Mix together all the dry ingredients in a bowl. Form a well in the centre and add 2/3 of the water. Combine to mix, then add enough of the remaining water to bring the ingredients together as a dough.

Turn onto a floured work surface and knead well for at least 10 minutes, or until smooth and elastic.

Divide the dough into tow equal-sized portions and shape these into buns. Sit on greased baking trays, cover with clingfilm (plastic wrap) and set aside to prove in a warm place for about 60 minutes, or until doubled in volume.

Remove the clingfilm (plastic wrap) then transfer to an oven pre-heated to 180°C and bake for about 30 minutes, or until lightly browned (the loaves should sound hollow when rapped on the base).

Turn onto a wire rack and allow to cool completely before slicing and serving.
