I remember having these very late one night with pommes frites siting outside in Monaco. They made such an impression that I simply had to have the recipe, which I am now sharing with you.

Ingredients:

4 sandwich baguettes or dinner rolls
1 tsp olive oil
1 onion, minced
1 green bell pepper, finely sliced
1 tomato, sliced
1 hard-boiled egg, chopped
2 anchovies, rinsed and chopped
2 small black olives, pitted and chopped
1 tbsp vinegar

Method:

Divide the bread in half horizontally then remove part of the centre of the bread to form a space for the filling.

Drizzle the base of each roll with olive oil then add some of the onion, bell pepper, tomato, egg, anchovy and olive in the base of each roll, dividing evenly. Season with vinegar, cover with the top half of the roll and serve.
