Kare Kare is a traditional Filipino stew with a thick savoury peanut sauce. Despite the name it’s not a curry, and is far more like a West African peanut soup (except with the absence of chillies).

Ingredients:

1.5kg (3 ½ lbs) oxtail cut into 5cm (2 in) slices (you can also use tripe or beef slices)
1 small banana flower bud, sliced
200g (1 bunch) bok choy, halved or quartered lengthways
200g (1 bunch) green (French) beans cut into 5cm (2 in) lengths
4 aubergines (eggplants), sliced
1 cup ground peanuts
125ml (1/2 cup) peanut butter
125ml (1/2 cup) shrimp paste
1l (4 cups) water about 1 Liter
1/2 cup annatto seeds soaked in 250ml (1 cup) water
1/2 cup toasted ground rice
1 tbsp garlic, minced
1 onion chopped
salt and freshly-ground black pepper
oil for frying

Method:

Pour the water to a large pan and bring to a boil. Add the oxtail and the onions, bring back to a boil, reduce to a simmer, cover and cook for 2.5 to 3 hours, until the meat is tender (or use a pressure cooker for 35 minutes).

Once the meat is tender stir in the ground peanuts, peanut butter and the water from the soaked annatto seeds (discard the seeds). Return to a simmer and cook for 6 minutes.

Now stir in the ground rice and simmer for 5 minutes.

Add a little oil to a frying pan over medium heat. Add the garlic, banana flour, aubergine, bok choy and beans. Fry for 5 minutes (add more oil or a little water as needed), then season to taste with salt and black pepper. Take off the heat and stir into the peanut stew.

Transfer the beef and peanut mixture to a serving dish and bring to the table.
