Ingredients:
450g onions, sliced
1 tsp olive oil
salt and freshly-ground black pepper, to taste
1.5l vegetable stock
2 tbsp butter
35g flour
100g cheese, grated (and firm full-flavour cheese will do)
Method:
Heat the oil in a pan and use to fry the onion for about 12 minutes, or until golden brown. Stir-in the stock and season with salt and black pepper then bring to a boil, reduce to a simmer, and cook for 30 minutes. Meanwhile, mix the butter and flour to a smooth paste then whisk into the soup mixture.
Return to a simmer and cook for a further 30 minutes, or until thickened.
Adjust the seasonings to taste then ladle into warmed soup bowls, top with the cheese and serve.
