This is a classic New Year recipe from the American south, where its considered good luck to eat black-eyed peas on New Year's day.

New Year's Hopping John: An American recipe for a dish of black eyed peas and ham with celery, onion and garlic served on a bed of rice that is typically prepared as a New Year meal.

Ingredients:

100g (1 cup) celery, sliced
1 medium onion, chopped
2 garlic cloves, minced
1 tbsp oil or bacon drippings
1l (4 cups) water
675ml (2 1/2 cups) chicken broth
440g black eyed peas (fresh or frozen and thawed)
225g cooked ham, cubed
1/4 tsp chilli flakes
3 bayleaves
300g (3 cups) cooked long-grain rice (hot)

Method:

If you do not have fresh black-eyed peas, take dried ones, wash well, soak in a large bowl of water with a generous pinch of baking soda over night. Drain and wash, place in a large pot and boil for 20 minutes. Drain and use in this recipe.

Heat the oil or bacon drippings in a large flame-proof casserole (Dutch oven) add the celery, onion and garlic and fry gently for about 6 minutes, or until soft but not coloured.

Stir in the water, then add the chicken broth, black-eyed peas, cooked ham, chilli flakes and bayleaves. Bring the mixture just to a boil, reduce to a simmer, cover and cook for about 40 minutes, or until the black-eyed peas are tender.

Remove and discard the bayleaves then serve the hopping John on a bed of rice.
