New Potato and Fennel Kebabs: Classic Irish recipe for a vegetarian barbecue dish of new potatoes and fennel threaded onto skewers and cooked on a barbecue (grill).
Ingredients:
500g equal-sized new potatoes
4 small fennel bulbs (the best would be 12 baby fennel bulbs)
salt and freshly-ground black pepper, to taste
olive oil, for brushing
Method:
Halve the fennel bulbs lengthways (quarter them if they are the small bulbs) then cut out the central core (take care to leave the root end intact).
In the meantime, cook the potatoes in boiling salted water for 10 minutes, then add the fennel and continue boiling for 5 minutes more. Drain thoroughly.
Thread the potatoes and fennel pieces onto skewers, then brush them with olive oil, ensuring that they are coated on all sides.
Place either over hot coals on a barbecue or under a hot grill and cook for between 6 and 8 minutes, turning and brushing frequently with oil, until they begin to char around the edges.
Season to taste and serve immediately.
