Ingredients:
1l water
50g dried pandanus leaves
6cm length of fresh ginger root, peeled and sliced thinly
Sugar, to taste (optional)
Method:
Combine the water, dried pandanus leaves and ginger slices in a saucepan. bring to a vigorous boil then immediately reduce the heat until the mixture is just simmering. Cover the pan and let it simmer for 15 minutes.
After this time, pass the tea through a fine-meshed sieve to remove the solids. Pour the tea into a warmed serving teapot.
Serve the tea hot, accompanied by sugar or honey for those who want to sweeten it.
Pandanus tea is also good served cold or chilled, so don't throw away any leftovers.
