Mutton Rissoles: Classic British recipe for a dish of minced mutton, bacon, onion and spice mix bound with egg that are shaped into round rissoles, coated in breadcrumbs and fried.
Ingredients:
500g mutton, minced
125g bacon, minced
1 onion, finely chopped
1/2 tsp ground cloves
1/2 tsp ground coriander seeds
1/2 tsp freshly-grated nutmeg
2 tbsp Worcestershire sauce
salt and freshly-ground black pepper, to taste
1 egg, beaten
breadcrumbs, to coat
oil for frying
Method:
Stir together the mutton, bacon and onion in a bowl. Add the seasonings and mix thoroughly before stirring in the Worcestershire sauce and egg then season to taste with salt and black pepper.
Shape the mixture into round rissoles and roll these in breadcrumbs to coat. Heat oil in a pan, add the rissoles and fry until nicely browned and cooked through.
Serve hot accompanied by a crisp green salad or seasonal vegetables.
