Muttabal is a traditional Turkish recipe for a classic dip of grilled aubergines, garlic, tahini and lemon juice that's typically served with pita bread. The full recipe is presented here and I hope you enjoy this classic Turkish version of: Muttabal.

Ingredients:
3 large aubergines (eggplants)
4 garlic cloves, crushed
90ml tahini paste
juice of 1 lemon
generous pinch of paprika
salt, to taste
chopped mint, to garnish
extra-virgin olive oil, to garnish
Method:
Place the aubergines under a medium grill and cook for about 15 minutes, turning frequently. Turn the heat to high and cook for a further 8 minutes, again turning frequently, or until the skins are well blackened and the aubergine is soft.
Hold the aubergines in a tea towel then carefully remove the skins whilst holding the fruit under a running cold tap. Gently squeeze to remove any excess moisture then chop the flesh and blend in a processor until smooth. Add the garlic and about 80ml of the tahini and blend once more.
Now add the lemon juice, paprika and salt to taste. Blitz until completely smooth. Adjust the seasonings to taste then scoop into a serving juice. Drizzle the olive oil over the top then add the chopped mint. Serve with pita bread or sesame bread.
