This is the classic British accompaniment for fish and chips or liver and onions. It's easy enough to buy in a tin, but there's something special about being able to serve the home-made variety. The recipe presented here is rather plain. I usually spice mine up just a little by adding 1 tbsp finely-chopped fresh mint.
Ingredients:
300g frozen garden peas
60ml double cream
1 tbsp butter
1/2 tsp salt
a few generous twists of freshly-ground black pepper
Method:
Bring a shallow pan of lightly-salted water to a boil. Add the peas and boil for about 3 minutes, or until just tender.
Drain the peas and transfer to a blender or food processor. Add the butter, cream, salt and pepper and purée until blended (don't over blend you still want some bits of peas in this to give texture). Adjust the seasonings and serve immediately.
Served with beer-battered fish and chips this becomes part of one of the UK's national dishes, fish and chips.
