A galette is a stuffed pancake and this recipe comes from Brittany, the home of pancakes! You can use any mushrooms you like, but a mix of wild mushrooms gives the best flavour.

Ingredients:

4 pancakes
300 to 400g of mixed wild mushrooms, diced
50g grated Gruyère cheese
50g butter
300ml Béchamel sauce
1 shallot
1 garlic clove
Salt and freshly-ground black pepper

Method:

Pre-heat your oven to 200°C (400F).

Melt a little butter in a non-stick pan over medium heat. Mix together the minced garlic and finely-chopped shallot with the mushrooms then add to the pan. Fry for about 6 minutes, until the mushrooms have released their liquid and have begun to brown.
At this point add the Béchamel sauce and stir to combine.

To assemble the dish, stuff the pancakes with the Béchamel mushrooms, then roll them up. Arrange your rolled pancakes in a buttered dish and cover them with the gruyere cheese. Transfer to your pre-heated oven and bake for 5 minutes. Serve immediately.
