Combine the apple juice, orange zest, cinnamon stick and cloves in a pan. Bring to a simmer and cook for about 10 minutes, or until the flavours have infused. Sweeten to taste with honey or sugar then ladle into heat-proof glasses.
If desired, garnish each drink with a strip of lemon peel and a cinnamon stick.
