Ingredients:
300g green olives
1 tsp cumin seeds
2 tsp fennel seeds
1/4 tsp ground cardamom
generous pinch chilli flakes
pinch of ground nutmeg
pinch of ground cinnamon
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp orange juice
3 garlic cloves, minced
Method:
Add the cumin seeds, fennel seeds, cumin seeds, cardamom, chilli flakes, nutmeg and cinnamon to a dry frying pan and heat for a few minutes, until fragrant, before adding the olive oil. Once the oil is hot, remove from the heat and add the olives. Toss them to coat then stir-in all the remaining ingredients.
Allow to cool, place in an air-tight container and refrigerate for at least 4 hours (this will keep for 3 weeks).
When ready to serve, drain and serve at room temperature.
