Minestra (Maltese Vegetable Soup)

Ingredients:

100g cauliflower
100g carrots
100g pumpkin flesh
50g white onions
20g celery
20g tomato purée
50g rice or orzo pasta, washed
1.25l water

Method:

Slice the vegetables and wash well then set aside to drain.

Add a little oil to a pan and use to fry the onion for about 6 minutes, or until tender. Add all the vegetables (but reserve the rice or pasta) and fry gently for a few minutes, stirring constantly. Now add the water, bring to a boil, then reduce to a simmer and cook for about 30 minutes, or until all the vegetables are done.

Stir in the rice (or pasta) at this point and continue simmering until the soup is quite thick. Ladle into warmed soup bowls then serve.
