Mikate ya Maji (Zenji Pancakes)

Mikate ya Maji (Zenji Pancakes) is a traditional Tanzanian recipe (originating on the Island of Zanzibar) for a classic thin wheat flour, egg and water batter pancake fried in ghee. Ingredients:

250g wheat flour
4 eggs
500ml water
pinch of salt
50g ghee or oil

Method:

Prepare your batter by mixing the water, flour, eggs, salt and ghee (or oil). Thoroughly and briskly whisk the ingredients together (add a little water if the mix is too thick) then strain the mix into a clean bowl.

Warm your frying pan (or crepe pan) and add a tiny knob of butter. When the pan is very hot add just enough batter to cover the base of the pan. Fry the pancake on both sides until golden brown. Your first pancake may fail (if often does) as the pan may not be hot enough and your batter may be too stiff or too thin.

Adjust accordingly and proceed to the second pancake. This should come out fine. Do not add any more butter or oil after the first pancake and there's oil in the batter already. Continue frying until all the pancakes are done.

You should really keep one pan for frying pancakes only and you should never wash this in soap (it's a bit like looking after a wok). Wash in hot water only and use kitchen paper to dry the pan.
