Midia Pilaf (Mussels Pilaf) is a traditional Armenian recipe for a classic dish of cooked rice with mussel meat that's served with mussels in their shells and decorated with mussel shells. Ingredients:
5 onions, chopped
180ml olive oil
700g mussels
150g rice, washed
3 tsp lemon juice
75g parsley, chopped
100ml white wine
2 spring onions, finely chopped
salt and black pepper
Method:
Clean and de-beard the mussels then add to a large pan along with the spring onions, wine and 200ml water. Bring to a simmer, season then cover and cook for about 10 minutes, shaking the pan frequently, or until the mussels have opened.
Drain the mussels, retaining the cooking liquid, then discard any mussels that have not opened. Reserve 200g of the mussels in their shells and set aside. Remove the remaining mussel meat from the shells and discard he shells.
Now add the oil to a pan and use to gently fry the onions until soft (about 8 minutes). Stir in the rice, turning to coat with the oil then make the mussel coking liquid up to 500ml. Add this to the rice along with the remaining ingredients (except the mussels). Bring to a simmer, cover and cook gently until the rice is almost done (about 20 minutes). Add the mussel meat and stir to combine. Continue cooking for about 5 minutes, more, until the rice is done and the mussels are cooked through. Add the mussels in their shells at the last minute then fork the rice to fluff it up and transfer to a large serving bowl.
Garnish with more parsley and decorate with a ring of mussel shells around the edges then serve.
