Microwave Waldorf Chicken Salad: A British recipe (based on an American original) for a classic salad made from microwave-cooked chicken mixed with celery, apples and walnuts served in a mayonnaise and cream dressing.
Ingredients:
1 oven-ready chicken (about 1.5kg)
25g butter
3 celery sticks, sliced
4 dessert apples, cored and diced
50g walnuts, coarsely chopped
150ml mayonnaise
150ml single cream (or soured cream)
2 tsp lemon juice
1 heart from a crisp lettuce
sprigs of
watercress, to garnish
Method:
Dot the chicken with butter then cover the wings with a little kitchen foil (to prevent burning). Place the bird in a roasting bag and loosely secure the open ends with string. Place in your microwave (1200W) and cook for between 10 and 15 minutes, or until the chicken is cooked through (the juices from the thickest part of the thigh should run clear when the bird is pierced with a skewer).
Remove from the microwave and set aside to cool. When cold, remove the skin from the chicken (discard this) then cut the meat into cubes and mix this with the celery, apples and walnuts. Blend the mayonnaise and cream in a bowl then beat in the lemon juice. Fold the resultant dressing into the chicken mixture.
Arrange a layer of crisp lettuce leaves in the base of a serving dish. Spoon the chicken mixture on top, garnish with a few sprigs of watercress and serve.
