Stuffed Plaice Swirls: A British recipe for a starter of halved plaice fillets used to line ramekins, filled with butter, leeks, mushrooms and rice that are cooked in a microwave.

Ingredients:

3 large plaice fillets, skinned
75g butter
175g leeks, chopped
100g mushrooms, sliced
1 tsp lemon juice
1 tbsp chives, snipped
50g long-grain rice, cooked
salt and freshly-ground black pepper, to taste

Method:

Cut each plaice fillet in half lengthways so that you have two long fillets. Grease six ramekins with butter and arrange the fish around the inside of each dish.

Place 25g of the butter in a microwave-safe bowl and cook in your microwave (1200W) for 30 seconds at full power to melt. Add the leeks, cover with clingfilm (plastic wrap), snipping two holes in the top. Place in your microwave and cook for 90 seconds on high power. Now add the mushrooms and cook for 2 minute more.

In the meantime, mix the remaining butter with the lemon juice until combined. Form into a sausage shape, cover with clingfilm and set in the refrigerator to chill and harden. Once firm cut the lemon butter into six slices.

Mix together the chives, rice and leeks. Season generously with salt and black pepper then divide the mixture between the ramekins. Cover each one with clingfilm (make a hole in the centre) then place in your microwave and cook for about 3 minutes, or until the fish is cooked (and flakes easily with a fork).

Pour away any excess liquid from the ramekins, top with the sliced butter and serve.
