Microwave Spaghetti with Bacon and Pesto Sauce: A British recipe for a dish of spaghetti with a bacon and pesto sauce that's adapted to be cooked quickly in a microwave.

Ingredients:

500g spaghetti
2.25l boiling water
1 tbsp oil
1 onion, peeled and chopped
56g tin of anchovy fillets
4 rashers of rindless streaky bacon
200g tomato-based pesto sauce (eg Sun-dried Tomato and Garlic Pesto
1 tbsp flat-leaf parsley, finely chopped
salt and freshly-ground black pepper, to taste
tomato wedges, to garnish
parsley sprigs, to garnish

Method:

Place the spaghetti in a deep bowl or oven-proof casserole dish. Pour over the boiling water and ensure the spaghetti is submerged. Add the oil then cover and transfer to your microwave (1200W). Cook on FULL power for about 10 minutes, or until the spaghetti is barely done.

Remove from the microwave and set aside to stand for 12 minutes.

In the meantime, place the onion in a small bowl, then pour over the oil from the anchovies. Set in your microwave and cook for 60 seconds.

Set the bacon on a plate and cover with kitchen paper. Set in your microwave and cook for about 160 seconds, or until crisp.

Drain the spaghetti, if necessary then mix in the onion and anchovy fillets. Crumble over the bacon and toss to mix.

Add the pesto sauce along with the chopped parsley. Adjust the seasoning to taste and, once more, toss to combine.

Cook for 2 minutes more, or until hot through.

Serve immediately, garnished with thin tomato wedges and sprigs of parsley.
