Microwave Smoked Haddock Chowder: A British recipe (based on an American original) for a classic soup of potatoes, onions, celery and smoked haddock cooked in a milk and fish stock base flavoured with parsley and lemon juice.

Ingredients:

225g potatoes, peeled and grated
175g onions, peeled and grated
100g celery, finely chopped
600ml hot fish stock (or chicken stock)
600ml milk
500g smoked haddock fillets, skin removed
salt and freshly-ground black pepper, to taste
2 tbsp parsley, finely chopped
1 tbsp fresh lemon juice
paprika, to garnish
fresh parsley, chopped, to garnish

Method:

Combine the potatoes, onions, celery and stock in a large microwave-safe bowl. Cover with a vented microwave-safe lid (or use clingfilm [plastic wrap] with a hole poked in the centre). Place in your microwave (1200W) and cook on high power for about 5 minutes, stirring the mixture twice during cooking. Take out of the microwave, add the milk and set aside.

Place the fish in a shallow microwave-safe dish. Cover with clingfilm (plastic wrap) and make a hole in the centre. Place in your microwave (1200W) and cook for 2 1/2 minutes, or until the fish is heated through. Slice the haddock into chunks (discard any bones). Add the fish pieces to the potato mix then adjust the seasonings to taste. Stir in the parsley and lemon juice, cover the bowl and cook in your microwave for 2 1/2 minutes.

Divide between four warmed soup bowls, sprinkle over a little paprika and garnish with chopped parsley. Serve immediately.
