Microwave Red Pepper and Tomato Soup: A British recipe for a soup of onion, red bell pepper and tomato that's cooked in ham stock using a microwave and which is pureed before serving.
Ingredients:
2 tbsp oil
1 onion, peeled and sliced
2 red bell peppers, de-seeded and sliced
500g tomatoes,
blanched, peeled, de-seeded and chopped
600ml hot ham stock
1 tsp dried mixed herbs
2 tsp granulated sugar
5 tbsp tomato purée
1 tbsp lemon juice
salt and freshly-ground
black pepper, to taste
plain yoghurt, to garnish
Method:
Place the oil in a large bowl (at least 4l), set in your microwave (1200W) and cook over high power for 20 seconds. Remove from the onions then stir in the onion and bell peppers. Return to the oven and cook for 3 1/2 minutes.
Now add the tomatoes then stir in the stock, herbs, sugar, tomato purée and the lemon juice. Cover with a vented microwave-safe lid (or use clingfilm [plastic wrap] with a hole poked in the centre) then place back in the microwave and cook for 3 1/2 minutes more, or until piping hot.
Remove from the microwave and adjust the seasonings to taste. Remove a few of the pepper slices and reserve for garnish. Pour the remaining soup into a blender or liquidizer and process until smooth.
Divide the soup between four warmed bowls, garnish with the reserved pepper slices, swirl in about a tablespoon of yoghurt and serve immediately.
