Microwave Rabbit Stew with Dumplings: A British recipe for a stew of rabbit and vegetables in a tomato and chicken stock base served with herbed dumplings that's adapted to be cooked in a microwave.

Ingredients:

675g boned rabbit (or 4 large rabbit portions)
2 tbsp plain flour
1 onion, peeled and sliced
1 garlic clove, crushed
2 carrots, peeled and sliced
2 medium potatoes, peeled and cubed
400g tin of plum tomatoes, drained
300ml hot chicken stock
1 bouquet garni
salt and freshly-ground black pepper, to taste

Method:

1/3 batch herbed dumplings made with 2 tbsp fresh sage, finely chopped

Place the meat in a microwave-safe bowl. Season liberally with salt and black pepper then scatter over the flour and toss to coat. Add the onion, garlic, carrots, potatoes, tomatoes, chicken stock and bouquet garni then mix thoroughly to combine. Cover with a sheet of clingfilm (plastic wrap) and snip two holes in the top.

Place in your microwave (1200W) and cook no full powder for 5 minutes. Reduce the power to 50% (medium) and cook for 5 minutes more. After this time, stir the ingredients, re-cover the dish and cook on 50% (medium) power for a further 10 minutes.

In the meantime, prepare the dumplings as in the herbed dumplings recipe (but only use 2 tbsp fresh, finely-chopped, sage). Turn the finished mixture onto a floured work surface and shape into four dumplings.

When cooked, remove the stew from the microwave and stir well. Sit the dumplings on top then return to your microwave. Cook on 50% (medium) power for 10 minutes then set aside to stand for 5 minutes.

Remove the bouquet garni and serve.
