Microwave Prawn Gumbo: A British recipe (based on a classic American Cajun original) for a classic stew of prawns and okra in a tomato and onion base thickened with cornflour that's cooked in a microwave.

Ingredients:

2 onions, peeled and sliced
50g butter
2 tbsp cornflour (cornstarch)
250ml warm water
400g tin of chopped tomatoes
1 large green bell pepper, de-seeded and chopped
2 garlic cloves, crushed
2 tsp sea salt
1 tsp freshly-grated nutmeg
1/2 tsp freshly-ground black pepper
500g peeled prawns
500g okra, trimmed and cut into 2cm lengths

Method:

Combine the onion and butter in a large (2l) glass or ceramic casserole dish. Cover with a vented microwave-safe lid (or use clingfilm [plastic wrap] with a hole poked in the centre). Place in your microwave (1200W) and cook on high power for about 4 minutes, or until the onions are both soft.

Whisk together the cornflour and a little of the water to form a smooth slurry. Whisk this into the remaining water then pour over the onions. Stir in the bell pepper, tomatoes, garlic, salt, nutmeg, black pepper, prawns and okra. Cover with a vented microwave-safe lid (or use clingfilm [plastic wrap] with a hole poked in the centre). Place in your microwave (1200W) and cook on high power for about 14 minutes, stirring half-way through to distribute the heat evenly.

Serve hot, accompanied by steamed long-grain rice.
