Microwave Jam Roly-poly Pudding: A British recipe for a jam and suet crust that's rolled up and which is adapted to be cooked quickly in a microwave.

Ingredients:

For the Suet Pastry:
225g self-raising flour
pinch of salt
100g shredded suet
150ml cold water

For the Filling and Topping:
100g jam
2 tsp lemon juice
2 tbsp caster sugar
1/2 tsp ground cinnamon

Method:

Sift the flour and salt into a bowl then stir in the suet. Add the cold water and mix together to form a soft but still manageable dough. Turn this dough out onto a lightly-floured work surface and roll out to form a 23cm square.

In a bowl, mix together your choice of jam with the lemon juice. Place in your microwave (1200W) and heat on FULL power for about 20 seconds, or until the jam is spreadable. Now spread this mixture evenly over the square of suet pastry, leaving a 1cm border around the edge. Now carefully roll the pastry up like a Swiss (jelly) roll, with the jam inside.

Carefully sit the roly-poly, joint side down on a sheet of greaseproof (waxed) paper. Roll the paper up loosely around the roly-poly, ensuring that you have enough space for the pudding to rise. Carefully tie the ends of the paper closed with string then cover loosely with clingfilm (plastic wrap).

Transfer to your microwave and cook on FULL power for 6 minutes, until well risen and cooked through. Test by inserting a skewer into the centre of the roly-poly. When done, the skewer will come out cleanly.

When cooked, mix together the caster sugar and cinnamon. Remove the clingfilm and greaseproof pudding from the roly-poly then sit on a serving dish. Sprinkle over the cinnamon sugar. Serve hot, accompanied by vanilla custard or jam sauce.
