Here is a great dish of chicken breast meat and vegetables threaded on skewers that's adapted to be coked in a microwave.
Ingredients:
4 skinless, boneless, chicken breasts
4 tbsp lemon juice
4 tbsp oil
1 tsp dried oregano, crumbled
1 tsp salt
freshly-ground black pepper, to taste
1 small aubergine (eggplant), cubed
8 baby courgettes (zucchini), cut into rounds
8 large button mushrooms
1 tomato, quartered
chopped parsley, to garnish
Method:
Cut the chicken into bite-sized cubes. In a bowl, mis together the lemon juice, oil, oregano, salt and black pepper. Whisk to combine, then add the chicken. Stir to coat then turn into a shallow dish. Cover and set aside to marinate in the refrigerator for about 90 minutes.
Add the aubergine and courgette pieces to the marinade with the mushrooms and tomatoes, stirring to coat.
Divide the ingredients between four bamboo kebab skewers. Brush with the leftover marinade then sit in a microwave dish.
Transfer to your microwave (1200W) and cook for 8 minutes. Turn the kebabs, baste with more leftover marinade and cook for about 6 minutes more, or until done through.
Serve hot on a bed of rice or shredded lettuce. Garnish with chopped parsley immediately before serving.
