Marinated Tofu Skewers

Marinated Tofu Skewers: Classic British recipe for a vegetarian barbecue dish of tofu (bean curd), vegetables and mushrooms in a garlic and herb marinade cooked over hot coals on a barbecue.
Ingredients:
350g tofu (bean curd)
1 red bell pepper
1 yellow bell pepper
2 courgettes (zucchini)
8 button mushrooms
slices of lemon, to garnish
For the Marinade:
finely-grated zest of 1/2 lemon
juice of 1/2 lemon
1 garlic clove, crushed
1/2 tsp fresh rosemary, chopped
1/2 tsp fresh thyme, chopped
1 tbsp walnut oil
Method:
For the marinade, combine the lemon zest, lemon juice, garlic, rosemary, thyme and oil in a shallow dish.
Drain the tofu and pat dry with kitchen paper then cut into cubes. Add these to the marinade and toss gently to coat. Set aside to marinade for about 25 minutes.
In the meantime, deseed and cut the bell peppers into 3cm pieces. Bring a pan of water to a boil, add the bell pepper pieces and blanch for 4 minutes. Refresh in a bowl of iced water, then drain thoroughly.
Using a potato peeler, remove strips of peel from the courgettes (zucchini) so that they have alternating stripes of white and green all the way around then cut into 3cm chunks.
Remove the tofu from the marinade (reserve any left-over liquid). Alternately thread the tofu, bell pepper pieces, courgette rounds and button mushrooms onto metal skewers.
Set these skewers on an oiled barbecue rack set over medium-hot coals. Cook for about 6 minutes, turning frequently and basting with the marinade.
Transfer the skewers to a warmed dish, garnish with lemon slices and serve immediately.
