Mafé Malienne (Malian Mafé)

Though most closely associated with Senegal, Mafé is also made in neighbouring Mali, particularly on the borderlands. Though considered a separate dish it is, for the most part, prepared like Mali's native Tiga Dégué. In essence it's a beef and rice stew in a tomato and peanut butter base.

Ingredients:

800g beef, cubed
500g carrots, scraped and sliced
2 onions, peeled and sliced into rings
300g white rice
1/2 green cabbage, cut into wedges
5 tomatoes, cut into wedges
3 tbsp smooth peanut butter
200ml tomato purée
2 tsp fresh thyme, chopped
dried chillies, crumbed
2 bayleaves
groundnut oil for frying

Method:

Heat groundnut oil in a flame-proof casserole. Add the beef and fry until nicely coloured all over. Now add the onions, carrots, tomatoes and cabbage.

Add enough water to just cover the ingredients and stir in the tomato purée and add the bayleaves and thyme. Bring to a boil, reduce to a brisk simmer and cook, covered, until the oil separates and floats to the surface (about 30 minutes).

In the meantime, bring a pan of salted water to a boil, add the rice and cook for about 25 minutes, or until tender.

Soak the dried chillies in a little hot water so that they release their aroma. Strain the juice and use as an accompaniment.

Serve the mafé hot, accompanied by the rice and the chilli water.
