London Particular
London Particular is a traditional English recipe (from London) for classic green soup made from dried split peas, bacon, carrot and celery cooked in chicken or ham stock that's finished with yoghurt and which is named after London's famous pea-souper fogs. This pea-green soup is named after the London 'pea-souper' fogs that were a feature of that city until the 1960s. The fogs of London may have gone but this hearty and warming soup remains.
Ingredients:
1 tbsp butter
50g streaky bacon, rind removed and chopped
1 medium carrot, diced
1 celery stick, chopped
450g split dried peas
2.5l chicken or ham stock
salt and freshly-ground black pepper, to taste
60ml natural yoghurt
chopped grilled bacon and croûtons, to decorate
Method:
Add he butter to a large saucepan and use to fry the bacon, onion, carrot and celery for about 8 minutes, or until the onion begins to soften.
Add the peas and stock, bring to a boil then reduce to a simmer, cover and cook for 1 hour or until the peas are soft. Allow the mixture to cool a little then transfer to a blender or food processor and purée until smooth.
Return the puréed soup to the pan, season with salt and pepper, stir-in the yoghurt and re-heat gently. Serve as soon as the soup is hot (do not allow to boil) and garnish with crispy bacon and croûtons.
