Lokše (Slovak Potato Pancakes)

Lokše (Slovak Potato Pancakes) is a traditional Slovak recipe for a classic pancake made from a potato, flour and egg dough that is fried and which can be stuffed with ham and cheese. Ingredients:

1kg floury potatoes
300g plain flour
1 egg
pinch of salt
oil for frying
sliced of ham
grated cheese

Method:

Scrub the potatoes clean, place in a pan of lightly-salted water and boil for about 30 minutes, or until tender. Drain then set aside to cool until they can be handled. Peel the potatoes and mash until smooth then work in the flour and egg. Add a pinch of salt.

Form into a ball then turn out onto a floured work surface. Roll the dough out as thinly as you can then cut into rounds (use a plate as a template).

Heat oil in a frying pan, add a pancake and fry on both sides until golden brown. Serve hot.

If making for breakfast, you can also prepare these savoury pancakes as follows:

Prepare the pancake mix as before. Heat oil in a frying pan, then add one of the pancake rounds. Set a piece of ham and some grated cheese on one half of the pancake. Flip over the second half to enclose the filling (seal the edges with the tines of a fork) and continue frying (flip over half way through) until the cheese has melted.
