Lohikeitto (Finnish Salmon Soup) is a traditional Finnish recipe for a classic soup of salmon in a cream and stock base with potatoes and carrots. The full recipe is presented here and I hope you enjoy this classic Finnish version of: Finnish Salmon Soup (Lohikeitto).

Ingredients:
1.75l vegetable or fish stock
4 medium potatoes cubed
1 small onion, finely minced (or use 1 thinly-sliced leek)
1 carrot, chopped
500g salmon
250ml double (heavy) cream or coconut milk (for dairy-free option)
¼ tsp ground coriander
1 tsp salt, or to taste
¼ tsp ground black pepper, or to taste
10g dill, chopped
Method:
Add fish or vegetable stock to a large cast iron casserole (Dutch oven) or stock pot then bring to a boil.
Add potatoes and cook for 15 minutes. Stir in the chopped carrot, minced onion and coriander and cook for another 5 minutes.
Next add in the salmon, season with the salt and black pepper and continue cooking for another 5 minutes.
To finish, pour in the double cream and simmer the soup for a final 5 minutes.
Adjust the seasonings to taste and ladle the Lohikeitto into the bowls.
