Leksour (Mauritanian-style Pancakes with Sauce)

This dish is the speciality of the city of Ouadane in northern Mauritania.

Ingredients:

For the Sauce:
1kg meat (mutton or lamb, typically)
500g carrots, scraped and chopped
4 tomatoes, chopped
500g potatoes, peeled and chopped
2 bell peppers, cored and chopped
2l water
1 bayleaf
salt and freshly-ground black pepper, to taste
oil for frying

For the Pancakes:
250g wheat flour
120g millet flour
5 pinches of salt
water, to blend (about 400ml)

Method:

Begin with the batter. Combine the flours and salt in a bowl then work in 450ml water. Beat until the batter is smooth then set aside to rest for 30 minutes.

Heat a little oil in a pan, cut the meat into bite-sized pieces then fry until nicely browned all over. Add the chopped vegetables then pour over 2l water. Bring to a boil, reduce to a simmer, cover and cook for 60 minutes.

Heat a shallow pan (a crêpe pan is best) and when hot rub with an oiled piece of kitchen paper. Add a ladleful of the batter and spread over the pan to form a smooth pancake. Fry until browned on the base then carefully flip over to fry on the other side. Set the pancake aside to keep warm as your cook the remaining batter.

To serve, arrange four pancakes per portion and spoon over the meat sauce. Serve hot.
