Here is a modern twist on the stir-fry that can be made from the leftovers of a roast (be that fowl, meat or even fish).

Leftovers Stir-fry with Green Papaya: An American recipe for a stir-fry of leftover meat, mushrooms and papaya in a lightly spiced and herbed base.

Ingredients:

1 tsp garlic, finely minced
1 tsp fresh ginger, minced
1 tbsp flat-leaf parsley, finely chopped
150g green papaya, grated
50g bread or left-over stuffing, crumbled
1/4 onion, chopped
4 button mushrooms, chopped
150g leftover meat (turkey, beef, lamb, fish, chicken or whatever you have)
1 tbsp groundnut oil
2 tbsp soy sauce
1 tbsp sweet chilli sauce

Method:

Heat a wok and add the oil. When hot, stir-fry the onion, garlic and ginger for 1 minute.

Add the grated papaya and stir to combine before adding the bread (or stuffing), mushrooms and meat.

Finally add the parsley, the soy sauce and the sweet chilli sauce. Toss to combine and stir-fry for about 1 minute or until heated through.

Serve immediately, accompanied by rice or noodles.
