Langues de Chat (Cat's Biscuits): A French recipe for a old-fashioned light biscuit (cookie) of a butter, flour and sugar batter lightened with beaten egg yolks that's often used to make trifles and other desserts.

Ingredients:

4 egg whites
100g butter, softened
100g strong, white, bread flour
170g icing sugar
1 drop of vanilla extract

Method:

Cream together the butter, icing sugar and vanilla extract until pale and creamy. Beat the egg whites until frothy in a separate bowl.

Now, using a wooden spoon, carefully incorporate the egg whites and flour into the creamed mix (alternate between the two). Bring the mixture together as a very loose batter then spoon into a piping bag.

Use this to pipe lines of about 5cm long and 1.5cm wide onto a greased baking tray lined with greaseproof (waxed) paper.

Transfer to an oven pre-heated to 180°C and bake for about 17 minutes, or until lightly golden around the edges. Allow to cool on a wire rack and store in an air-tight tin.
