Ingredients:
10 Turkish flatbreads or 5 pitta breads, halved
500g lean minced beef
2 onions, chopped
110g parsley
1 tsp red chilli paste
2 large tomatoes, de-seeded
1 tsp red chilli flakes
1 garlic clove, chopped
1 tsp salt
Method:
Combine all the ingredients (except the bread and beef) in a food processor and pulse to chop. Turn into a bowl, add the minced beef and knead to mix thoroughly. Bring together as a ball, cover in plastic wrap and refrigerate for an hour.
Allow to warm for 20 minutes then spread the mixture as evenly over the surface of the flatbreads as you can. Place on baking trays and set under a hot grill. Cook for about 3 to 4 minutes, or until the topping is hot and cooked through but the flatbreads have not begun to burn.
Fold the Lahmacun over in half, cover with a towel and place in a warm oven to keep hot as you cook the remainder. Arrange on plates, garnish with ground sumac and serve with a green side salad.
