This barley-based casserole is traditionally served on Christmas Eve but it makes an excellent and unusual side dish for any meal.

Ingredients:

210g barley
210g dried mushrooms
1.7l water
2 tsp salt
1/4 tsp freshly-ground black pepper
2 cloves garlic, finely minced
100g onions, finely chopped
50g butter
1 tsp dried marjoram, crumbled

Method:

Melt the butter in a pan and use to fry the onion for about 6 minutes, or until soft and translucent. Meanwhile, wash the mushrooms until free from grit then stir into the onion mix along with the barley grains. Add the water and salt, bring to a simmer then cook, uncovered, until all the water has evaporated away, stirring frequently.

Add all the remaining ingredients at this point then turn the mixture into a well greased casserole or baking dish, cover and transfer to an oven pre-heated to 180°C. Bake for about 30 minutes, then serve hot.
