Koshari (also known as Kosheri) is a traditional Egyptian dish of lentils, rice and pasta that counts as Egyptian 'fast food' and is often sold by street vendors.

Ingredients:

140g brown lentils
140g rice
140g uncooked macaroni (or orzo) pasta
2 large onions, diced
2 tbsp oil
480ml tomato sauce
1/4 tsp ground cumin
hot chilli powder, or sauce, to taste
salt, to taste

Method:

Bring a pan of salted water to a boil, add the lentils and cook for about 20 minutes, or until tender. Drain then set aside.

In a separate pan of salted water cook the rice for about 20 minutes, or until tender. Drain and set aside. At the same time cook the pasta until tender.

Combine the cooked lentils, rice and pasta in a cooking pot. Heat the oil in a pan and use to fry the onions for about 12 minutes, or until browned. Drain the onions on absorbent paper then strain the oil into the lentil mix. Return the lentil mix to the heat and cook for about 8 minutes, stirring constantly.

To serve, place the lentil mix on each plate, top with tomato sauce and then the onions. Garnish with chilli powder (or sauce) and a little ground cumin and serve.
