Kokosja Supa (Chicken Soup with Red Bell Peppers) is a traditional Serbian recipe for a classic soup of chicken, red bell peppers, tomatoes, cauliflower and potatoes cooked in chicken stock. Ingredients:
2 large onions, chopped
2 tbsp olive oil
paprika, to taste
1l chicken stock
1 medium chicken, cut into 8 serving pieces
2 large red bell peppers
1 tin (440g) tomatoes, chopped
450g cauliflower, separated into florets
450g potatoes
Method:
Heat the oil in a pan and use to fry the onions until soft (about 6 minutes). Add the stock and bring to a boil then add the chicken. Bring to a simmer, cover and cook for 10 minutes before adding the peppers, tomatoes and cauliflower.
Return the mixture to a simmer then cover and cook for a further 10 minutes before adding the potatoes. Return to a simmer then cover once more and cook for a further 25 minutes (add more stock, as necessary). Ladle into warmed bowls and serve with crusty bread.
