Poi is a porridge-like pudding made from green coconut flesh, coconut cream and jaggery that's thickened with dried banana.
Versions of poi are made throughout Oceania from Micronesia to Hawaii. Hawaiian and Samoan poi are almost identical. Kiribati poi is a variant of this, which includes unripe coconut flesh and dried (rather than fresh) banana in the coconut milk base.
Ingredients:
400ml (1 tin) coconut milk
2 tbsp brown sugar
meat from 1 unripe coconut, chopped
100g dried banana, pounded in a mortar
shavings of jaggery, to garnish
Method:
Combine the coconut milk, coconut flesh, brown sugar and dried banana in a food processor. Pulse to chop then run the motor and blend everything to a smooth paste.
Pour into a bowl garnish with the jaggery and serve.
